Agreed the PKG-INFO is not mandatory, thus there are some ports which keep it but not a big deal here.

Normally unit tests shouldn't fail. I think we can try to fix them using patches or upstream before landing the changes. What do you think ? Otherwise

This one can be closed now. I check on r3892024 and now CMAKE_ARGS use -DPython_ADDITIONAL_VERSIONS

Looks good to me. Adding @dirrmtry because of pycache files leftovers is approved. But IMHO, in long term we need to kill the missing leftovers in order to properly package python.
