Summary

Leaving it as "-" exposes a ZFS implementation detail of fetching the
property that we don't want to preserve, and it actually breaks
be_nextboot_name() which expects a non-empty rootfs to contain a fully
qualified dataset.

Blank it out to fix consumers of be_nextboot_name(), which would get
back a pointer to NULL + sizeof(char) if bootfs wasn't set.
