zathura*: remove useless USE_LDCONFIG

USE_LDCONFIG will mean we will add a path to the search path for the
runtime linker, for zathura plugins are loaded via dlopen, we don't
need to resolv anything in the plugin directory

this also eliminates a userless post install script
