deskutils/virt-manager: update to 5.0.0

• For 5.0.0, virt-manager has switched to meson, so re-organise the Makefile accordingly
• Don't use shebangfix, bin scripts are generated from a template in scripts/make_bin_wrapper.py, so patch this template directly
• Set GLIB_SCHEMAS
